Every decision we make is driven by our desire to create the smallest environmental footprint possible.

1.

Our bagasse agave waste is dried and used to heat our ovens and stills. We also donate our spent bagasse to the local adobe brick manufacturer where it is used to make traditional mud bricks.

2.

Alcohol is very good at drawing compounds out of whatever it touches. In the case of plastic, synthetic oestrogens/chemicals/BPA and unwanted flavors can leach into alcohol within a matter of days if left in contact. We made a decision from the beginning to never have alcohol in contact with plastic - it's not a good idea for the environment or for peoples health. We ferment in clay and wood, collect our distillate in 20-litre glass carboys, and store our batches in glass and stainless steel receptors.

3.

Our bottles are made from 100% recycled glass from Coca-Cola, Sprite, Fanta, Fresca and tequila bottles.

4.

We use untreated cardboard pulp to make our boxes that do not use chemical bleaches and coatings.

5.

At our plant nursury we germinate 20,000 agaves and 600 oak tree seedlings each year to ensure we are putting back what we take out.

6.

When the life cycle of the salmiana-manso agave ends, the dried-up plant material is processed to extract natural fiber products such recycled paper.
